Sausage Minestrone Soup
- 1/2 lb. bulk Italian sausage
- 1 c. chopped onion
- 2 cloves garlic, finely chopped
- 8 c. water
- 1 (28 oz.) can Italian-style tomatoes, undrained and broken
- 5 tsp. beef flavored bouillon or 5 cubes bouillon
- 4 tsp. Italian seasoning
- 1/4 tsp. pepper
- 2 medium carrots, pared and sliced
- 1 (15 oz.) can garbanzo beans
- 1 (9 oz.) pkg. frozen cut green beans, thawed
- 1/2 (8 oz.) pkg. spaghetti, broken
- grated Parmesan cheese
- In a large kettle or Dutch oven, brown sausage, onion and garlic.
- Pour off fat.
- Add remaining ingredients except beans, spaghetti and cheese. Bring to a boil.
- Reduce heat and simmer, uncovered, 1 hour. Stir in beans and spaghetti.
- Bring to a boil. Reduce heat and simmer, uncovered, 10 minutes or until spaghetti and green beans are tender.
- Serve with Parmesan cheese. Refrigerate leftovers.
- Makes 4 servings.
