Sausage Minestrone Soup

  1. In a large kettle or Dutch oven, brown sausage, onion and garlic.
  2. Pour off fat.
  3. Add remaining ingredients except beans, spaghetti and cheese. Bring to a boil.
  4. Reduce heat and simmer, uncovered, 1 hour. Stir in beans and spaghetti.
  5. Bring to a boil. Reduce heat and simmer, uncovered, 10 minutes or until spaghetti and green beans are tender.
  6. Serve with Parmesan cheese. Refrigerate leftovers.
  7. Makes 4 servings.
