Parmesan-Crusted Swiss Steak
- 2 1/2 lb. top round steak
- 2 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. each: paprika and instant coffee
- 1/8 tsp. garlic powder
- 2 Tbsp. shortening
- 1/4 c. chopped onion
- 1/2 c. bouillon
- 1/2 c. white wine
- 1/2 c. grated Parmesan cheese
- 2 Tbsp. mayonnaise
- Score steak, making diagonal cuts about 1/2-inch in diameter. Mix flour, seasoned salt, paprika, coffee and garlic powder. Rub well into both sides of meat.
- In pan, heat shortening; brown meat.
- Add onion, bouillon and wine.
- Cover and simmer meat until tender, about 1 1/2 hours.
- Remove meat and thicken gravy with 1 teaspoon of cornstarch.
- Combine cheese and mayonnaise.
- Place over meat.
- Slip under broiler until glazed and brown.
- Serve steak with gravy.
