Parmesan-Crusted Swiss Steak

  1. Score steak, making diagonal cuts about 1/2-inch in diameter. Mix flour, seasoned salt, paprika, coffee and garlic powder. Rub well into both sides of meat.
  2. In pan, heat shortening; brown meat.
  3. Add onion, bouillon and wine.
  4. Cover and simmer meat until tender, about 1 1/2 hours.
  5. Remove meat and thicken gravy with 1 teaspoon of cornstarch.
  6. Combine cheese and mayonnaise.
  7. Place over meat.
  8. Slip under broiler until glazed and brown.
  9. Serve steak with gravy.
