Rice with Balsamic Onions and Shrimp

  1. Warm up a large skillet over medium-high heat.
  2. Add 2 tablespoons olive oil and garlic.
  3. Saute for 15 seconds.
  4. Add the onions and saute until onion begins to soften and become tender.
  5. Reduce heat to low and add balsamic vinegar.
  6. Cook for about 3 minutes, stirring frequently.
  7. Remove the balsamic onions from the skillet and add the remaining 1 tablespoon olive oil over medium heat.
  8. Add shrimp and cook for 23 minutes, or until they turn pink.
  9. Season shrimp to taste with salt and pepper.
  10. Layer cooked rice with peas, balsamic onions, and shrimp evenly on each plate.
  11. Garnish with fresh green onions and feta.
