Enchilada Pie Casserole
- 1 1/2 lb. lean ground beef
- 3 small onions, diced
- 1 pkg. corn tortillas
- 4 c. grated Cheddar cheese
- 4 c. grated Mozzarella cheese
- 3 cans kernel corn
- 1 (32 oz.) can enchilada sauce
- seasoning salt and pepper to taste
- 1 (16 oz.) container sour cream
- 1/4 c. vegetable oil
- Brown
- ground
- beef
- with
- diced onions and seasonings, then drain.
- Heat
- enchilada
- sauce in pan.
- Heat tortillas in oil and drain.
- Dip
- in sauce.
- Layer tortillas, ground beef, corn and sour
- cream
- in
- a 13 x 9-inch glass casserole dish. Pour enchilada sauce over layer and spread out.tdd a mixture of cheese.
- Repeat
- once
- more.
- Baketasserole in preheated oven at 350u0b0 for 40 minutes or until cheese is bubbly.
