Key Lime Pie
- 4 eggs, separated (separate 1 egg white by itself)
- 1 (14 oz.) can sweetened condensed milk (not evaporated)
- 1/2 c. lime juice
- green food coloring
- 1/2 tsp. cream of tartar
- 1/3 c. sugar
- 1 (8 or 9-inch) baked pie shell
- Beat the egg yolks; stir in the sweetened condensed milk, lime juice and a few drops of green food coloring.
- In a small bowl, stiffly beat 1 egg white; fold into the milk mixture.
- Turn into baked and cooled 8 or 9-inch pastry shell.
- Beat 3 egg whites with cream of tartar until foamy; gradually beat in the sugar, one tablespoon at a time, until meringue is stiff, but not dry. Spread on top of pie, sealing carefully to edge of shell.
- Bake in 350u0b0 oven for 15 minutes or until meringue is golden.
- Cool. Chill before serving.
