Roasted Sweet Pepper Pasta

  1. Saute onions, garlic, celery, artichoke, peppers (both kinds), and herbs in olive oil over medium heat until fragrant and toasty.
  2. Add tomato paste and let it brown for a few minutes.
  3. Add the wine and reserved pasta-cooking water until of desired consistency.
  4. Add the squirt of lime juice.
  5. Salt and pepper to taste, and add the cayenne if you want it spicier.
  6. Add the spinach and allow to wilt.
  7. Stir into pasta and enjoy!
