Sugar-Free Date Coffee Cake

  1. Beat banana and butter in mixer bowl until creamy. Add eggs, vanilla and water; beat until smooth. Add mixture of flour, baking soda and baking powder; beat until smooth. Stir in 1 1/2 cups dates. Spread evenly in greased and floured 9 x 13-inch baking pan. Mix coconut, walnuts and 1/3 cup chopped dates in small bowl. Sprinkle over batter. Bake at 350u0b0 for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Yield: 10 servings.
