Curried Turkey Apple and Celery Sandwich
- 1 1/4 cups turkey cooked and finely diced
- 13 cup celery finely diced
- 13 cup apples crisp, peeled and finely diced
- 2 each scallions, spring or green onions finely chopped
- 1 tablespoons mayonnaise, light
- 3 tablespoons yogurt, plain low-fat
- 1 teaspoon curry powder or to taste
- 1 teaspoon lemon juice
- 1 pinch salt and black pepper or to taste
- 8 slices whole wheat bread or whole wheat
- Combine turkey, celery, apple, scallions, mayonnaise, yogurt, curry powder and lemon juice in a medium bowl and stir until well mixed.
- Season with pinch of salt and black pepper, or to taste.
- Toast bread in toaster oven, then butter bread slices, trim off crusts if desired.
- Spread the turkey mixture evenly on each of four slices.
- Top with the remaining 4 slices.
- Cut each into 4 triangles or squares if needed.
- Serve.
