Fish And Potato Cakes
- 1/4 c. oil
- 1/2 c. chopped onion
- 1/4 c. chopped green onions
- 1/4 c. chopped fresh parsley
- 3 c. mashed potatoes
- 1/2 lb. fish, cooked and flaked (see note)
- salt to taste
- hot sauce or cayenne pepper to taste
- 1 large egg, beaten
- 1/2 tsp. garlic powder
- 2 c. seasoned breadcrumbs
- In small skillet over medium heat, heat the oil, then saute the onions, green onions and parsley until the onions are clear. Pour them into a large mixing bowl with the potatoes, fish, salt and hot sauce, then stir in the egg, garlic powder and bread crumbs.
- Form into patties and fry in 1/4-inch of oil in a large skillet over medium-high heat, turning once until golden brown on both sides.
- Yield:
- 10 to 12 (3-inch) patties.
