Guyana Rice Treat
- 1 lb. large shrimp
- 2 Tbsp. oil
- 1 to 2 c. fresh string beans, cut into 1/4-inch lengths
- 2 tomatoes, diced
- 1/4 lb. shredded cabbage
- 2 onions, chopped
- 1 piece pumpkin, diced
- 1 green pepper, diced
- 6 slices pineapple, diced
- 1 pt. rice, cooked
- salt to taste
- pineapple shell for serving
- parsley
- Clean shrimp and remove shells.
- Saute shrimp in oil for about 3 minutes or until pink.
- Stir occasionally.
- Add vegetables and continue cooking for 5 to 10 minutes or until vegies are crunchy. Stir occasionally.
- Add cooked rice, pepper, salt and diced pineapple.
- Mix well together.
- Allow to become quite hot.
- Spoon lightly into pineapple shell.
- Garnish with parsley and serve hot.
