Beefy Summer Salad Recipe
- 1 lb deli roast beef, 1/2" thk cut 1/2" cubes
- 1 x tomato coarsely minced
- 1 x cucumber peeled, seeded, and coarsely minced
- 1/2 head iceberg lettuce coarsely minced
- 1/2 c. mayonnaise
- 1 Tbsp. prepared horseradish
- 1 tsp onion pwdr
- 1/2 tsp dill weed
- 1/4 tsp salt
- 1 tsp freshly-grnd black pepper
- In a large bowl, combine roast beef, tomato, cucumber, and lettuce, set aside.
- In a small bowl, combine mayonnaise, horseradish, onion pwdr, dill weed, salt, and black pepper, mix well.
- Pour dressing over the roast beef mix and toss to coat.
- Serve immediately.
- This recipe yields 4 servings.
- Comments: Deli roast beef does the trick when you want meat in the summer, but do not want to heat up the kitchen.
