Autumn Cheesecake (Spiced Pumpkin) Recipe

  1. Prepare 9" springform pan (butter sides and bottom).
  2. Combine graham or possibly vanilla wafer crumbs, walnuts, melted butter and press up sides and on bottom of pan.
  3. Chill.
  4. In large bowl, beat cream cheese till light.
  5. Gradually add in sugar, flour and spices.
  6. Beat in Large eggs, 1 at a time, blending well.
  7. Add in pumpkin puree and blend well.
  8. Pour batter into chilled pan and bake in center of oven at 325 F for 90 min.
  9. Turn off heat and let cake stand for 30 minutes.
  10. with door open.
  11. Cold on rack and then refrigeratefor 2 hrs for about 2 hrs.
  12. Serve with whipped cream.
