Mini Apple pocket pie
- 1 large sweet apple, mince
- 1/2 cup brown sugar
- 1/4 cup cinnamon powder
- 1 cup water
- 1 tbsp cornstarch
- 1 cup all-purpose flour
- 1/2 stick butter
- 1 cup cold water
- 1 pinch salt
- 1 egg for egg wash
- Make the dough.
- Cut the butter into the flour.
- Do not knead.
- Keep on cutting until butter is incorporated with the flour.
- Add salt.
- Slowly add the cold water.
- Using your hands knead the flour and water.
- Dash some extra flour if its sticky.
- Refrigerate for 4hrs
- In a pan, saute sweet apples.
- Add sugar and cinnamon powder.
- Add water.
- Let it boil for 5 minutes.
- On a seperate bowl scoop a small amoint of thr juice then mix the cornstarch.
- Place it back to the pan.
- When apple sauce are thick enough,remove from heat.
- Let it cool for 20mins.
- Pastry.
- On a floured table using a rolling pin, make 8 cuts with 5x3 inches size from the pastry.
- Scoop some cooked apples on your pastry.
- Make sure nothing spills on the sides.
- Fold the pastry covering the apples.
- Press down the sides.
- Make a mark using a form.
- Make some holes in the middle of the pastry too using fork.
- Brush some egg for browning.
- Pre heat oven.
- Bake for 30-45 minutes
- Dash some cinnamon powder on top,optional
