Tuna Pompons(Low Calorie)
- 1/4 c. finely chopped celery
- 1/4 c. chopped onions
- 1 1/2 Tbsp. butter or margarine
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. poultry seasoning
- 1/8 tsp. black pepper
- 3/4 c. milk
- 3 chicken bouillon cubes
- 1 1/2 c. cool cooked rice
- 1 (9 oz.) tuna, drained and flaked
- 3/4 c. grated Cheddar cheese
- 1/4 c. fine dry bread crumbs
- 1/2 tsp. paprika
- 1 can condensed cream of chicken or mushroom soup
- 2 Tbsp. sour cream
- Cook celery and onion in butter until soft but not brown. Blend in flour and seasonings.
- Add milk and bouillon.
- Cook, stirring constantly, until mixture is smooth and thickened. Chill.
- Mix sauce with rice, tuna and cheese.
- Adjust seasoning, if necessary.
- Form into 8 balls (1/3 cup each).
- Roll in combined bread crumbs and paprika.
- Place in a baking dish sprayed with Pam.
- Bake at 425u0b0 for 30 minutes.
- Serve with sauce made by combining and heating soup and sour cream.
- Makes 4 servings.
