Chicken Potatoes and Bacon Casserole
- 1 tbsp Lemon and pepper seasoning salt
- 1 tbsp Dried thyme
- 1 tbsp paprika
- 1 tbsp black pepper
- 1 tsp salt(optional)
- 1 tbsp garlic powder(can use 2 if u desire)
- 3 Boneless chicken breast (cubed)
- 1/2 cup olive oil
- 2 1/2 cup Mexican style blend cheese
- 1 1/4 cup bacon crumble
- 1 cup cilantro
- 1 cup Green onions (diced)
- 5 large potatoes(peeled or not)
- Pre heat oven to 400F
- In a casserole, add oil, salt, garlic, pepper and paprika...mix well.
- Add all your potatoes, chicken, half of your cilantro mix well (with your hands) to coat.
- Cook in oven for 50-60 minutes (or till u can stick a fork in ur potatoes)
- Once everything is done, add remaining cilantro, bacon, cheese and green onions ( spread wisely) return to oven for 5- 10 minutes or till all cheese is melted and Bacon sizzling.
- Serve hot.....Enjoy.
