Encherito's

  1. In a skillet brown beef.
  2. Half way through cooking add diced onions, bell pepper, seasonings, garlic, and ro-tel.
  3. Once fully cooked spoon meat mixture into tortillas, roll them up enchilada style and lay out in casserole dish.
  4. Once all are laid out cover them with chili, and cook for 15 minutes in the oven at 350F.
  5. Add cheese to top and cook another 5 minutes.
  6. I call these encherito's because it's not quite a burrito, and not quite an enchilada.
