Encherito's
- 12 large tortillas
- 2 lb ground beef
- 4 1/2 tbsp chili power
- 1 large onion (I like the purple for this)
- 2 tbsp minced garlic
- 1 can ro-tel
- 1 large can of Wolf brand chili, or left over home made
- 1 salt/pepper to taste
- 1 bell pepper
- 1 packages 3 cheese Mexican blend
- In a skillet brown beef.
- Half way through cooking add diced onions, bell pepper, seasonings, garlic, and ro-tel.
- Once fully cooked spoon meat mixture into tortillas, roll them up enchilada style and lay out in casserole dish.
- Once all are laid out cover them with chili, and cook for 15 minutes in the oven at 350F.
- Add cheese to top and cook another 5 minutes.
- I call these encherito's because it's not quite a burrito, and not quite an enchilada.
