Elva Green'S Version Of Chicken Cacciatore
- 1 chicken, cut up in pieces with skin removed
- 2 (16 oz.) cans stewed tomatoes with green peppers and onions
- 1 (8 oz.) can mushrooms (stems and pieces)
- 1 (8 oz.) can tomato sauce
- 1 clove garlic, crushed (optional)
- 1 Tbsp. Mrs. Dash garlic and herb
- 1 Tbsp. Italian seasoning
- 1 bay leaf
- 1/2 to 1 tsp. Season-All to taste
- 1 green pepper, cut in chunks
- 2 large onions, cut in chunks
- Use a Dutch oven type pot.
- Put dark pieces of chicken in pot along with all other ingredients except for white meat.
- Simmer for about 15 minutes, then add the white pieces of chicken.
- Cook for approximately 1 to 1 1/4 hours until meat is tender.
- Remove bay leaf before eating.
- This recipe may be enjoyed alone, with noodles or over rice.
- Have a green salad with it.
