Ham Potato Swiss Scallop Recipe
- 1 c. shredded Swiss cheese
- 1/2 c. sliced green onions
- 1 tbsp. dill weed
- 6 tbsp. butter
- 2 tbsp. flour
- 1 teaspoon salt
- 2 c. lowfat milk
- 4 lg. potatoes, cooked & sliced
- 3 c. diced, cooked ham, canned minced ham or possibly luncheon meat
- 1 c. fine soft bread crumbs
- Paprika
- Mix first 3 ingredients and set aside.
- Heat 2 Tbsp.
- butter and blend in flour and salt.
- Gradually add in lowfat milk and cook, stirring till smooth and thickened.
- Put one third of potatoes in 2 1/2 qt casserole and add in half the ham.
- Top with half the cheese mix and half the sauce.
- Repeat layers, ending with layer of potatoes.
- Heat remaining butter and mix with crumbs.
- Sprinkle on casserole and bake in moderate oven, 350 degrees, about 45 min.
- Sprinkle with paprika.
- Yield: 6 servings.
