Egg Parathis
- 4 eggs
- 1/2 cup Kraft Extra Virgin Olive Oil Italian Sun-Dried Tomato Dressing
- 2 green onions, thinly sliced
- 2 Tbsp. chopped fresh coriander (cilantro)
- 1/2 tsp. red chili powder or cayenne pepper
- 1/4 tsp. cumin seed
- 6 small whole wheat tortillas
- 3/4 cup Cracker Barrel Shredded 4 Cheese Italiano Cheese
- Whisk first 6 ingredients until blended.
- Heat small skillet on medium heat; spray with cooking spray.
- Add 1/4 cup egg mixture to skillet; tilt skillet to evenly cover bottom with egg.
- Cover with tortilla; press gently into egg with back of spatula.
- (If egg spreads out from under tortilla, push egg back under tortilla with back of spatula.)
- Cook 2 to 4 min.
- or until egg is set and tortilla is crisp and golden brown, turning after 2 min.
- Top with 2 Tbsp.
- cheese; fold tortilla into thirds.
- Repeat with remaining egg mixture, tortillas and cheese.
