Chow Mein
- 1 lb. fresh egg noodles
- 1/2 c. Chinese peas
- 1/2 onion
- 2 stalks celery
- 2 large Chinese mushrooms or fresh mushrooms
- 1/2 lb. fresh bean sprouts
- 1/2 lb. bok choy or nappa
- 1/2 lb. flank, lean pork or chicken
- 1/2 tsp. salt
- 1/2 tsp. sugar
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- black pepper
- 1 Tbsp. oil
- 1 egg
- 2 to 3 stalks green onions
- 1 tsp. sherry
- 1 c. water
- 2 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- String peas, slice onions, slice mushrooms, cut celery diagonally and cut flank or pork across the grain and then into small pieces.
- Marinate meat in a mixture of cornstarch, soy sauce, pepper, salt, sugar, sherry and 1 tablespoon vegetable oil. Mix 1 cup water, 2 tablespoons cornstarch and 1 tablespoon soy sauce and set aside.
