Mexicali Layered Salad
- 2 cans red kidney beans, drained, washed and drained again
- 1 c. sliced radishes
- 1 c. finely chopped celery
- 2 medium or 1 large cucumber, sliced thin or cubed
- 2 c. tomatoes, cubed fairly small
- 2 avocados, sliced thin or cubed
- 2 c. chopped green onions
- enough shredded lettuce to cover salad (about 1-inch covering)
- 1 to 2 c. shredded cheese (low-fat Cheddar)
- chopped black olives and sliced jalapeno peppers (optional)
- 1 bottle fat-free Ranch dressing
- Doritos chips
- Layer ingredients as listed in large bowl (or container). After lettuce is added, drizzle dressing over top.
- Completely cover (this will drain through veggies).
- After chilling for an hour, add cheese to top and garnish with olives, peppers and paprika and crushed chips around to edge of salad.
- Serves a bunch.
- Serve with remaining chips.
