Chicken Apritada Style Recipe
- 1 (2 to 3 lb.) chicken
- 1 clove garlic, crushed
- 1/4 c. minced onion
- 1 (6 ounce.) can tomato sauce
- 1 tbsp. peppercorns
- 2 teaspoon salt
- 1 teaspoon pepper
- 1/4 c. water
- 2 med. size potatoes, cubed
- 1 (4 ounce.) can pimentos
- Cut chicken into serving pcs.
- Simmer for 15 min in garlic, onion, tomato sauce, bay leaf, peppercorns, salt, pepper and water.
- Add in cubed potatoes and pimento.
- Continue to cook till the potatoes are tender.
- Before serving, remove peppercorns.
- Serve warm.
- Serves 4.
