Hearty Corn Chowder
- 2 Tbsp. vegetable oil
- 3 Tbsp. chopped onion
- 1/2 c. chopped celery
- 3 Tbsp. chopped green pepper
- 1/2 c. sliced fresh or canned mushrooms (optional)
- 1/2 lb. precooked turkey smoked sausage, cut into 1/2-inch cubes
- 1 1/2 c. diced, peeled potatoes (uncooked)
- 2 c. water
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. caraway seed (optional)
- 3 Tbsp. flour
- 1/2 c. milk
- 2 c. hot milk
- 2 c. canned corn
- oyster crackers or croutons
- Parmesan cheese
- In large, heavy saucepan, stock pot or Dutch oven, saute the onion, celery, green pepper and mushrooms in the vegetable oil until the onion is lightly browned.
- Add the turkey smoked sausage and continue cooking for 2 minutes.
- Add the diced potatoes, water, salt, pepper and caraway seed.
- Simmer for 45 minutes or until potatoes are tender.
