Mushroom Smothered Chicken Over Rice
- 4 boneless, skinless chicken breasts
- 1 (10 oz.) can Weight Watchers cream of mushroom soup
- 1/2 tsp. Molly McButter
- 2 c. mushrooms, sliced
- 1/2 tsp. parsley flakes
- 1/2 tsp. celery flakes
- 1/4 tsp. dry onion flakes
- 3 c. cooked rice
- salt and lemon pepper to taste
- Season chicken breasts on both sides with lemon pepper.
- Brown in skillet sprayed with nonstick cooking spray.
- In a small bowl, combine soup, Molly McButter, mushrooms, parsley flakes, celery flakes and dry onion flakes.
- Mix thoroughly.
- Pour this mixture over browned chicken breasts in skillet and simmer about 15 minutes or until chicken breasts are tender.
- Serve over cooked rice.
- Entire recipe makes 4 servings.
