Golden Chicken
- 3 lb. broiler fryer
- 5 c. corn flakes (or 1 1/4 c. crushed)
- 1/4 c. chopped onion
- 1/2 c. chopped celery
- 1/4 c. butter
- 1/4 tsp. salt
- 1/2 tsp. poultry seasoning
- 1/2 c. stock or water
- 8 canned peach halves
- Reynolds wrap
- Prepare chicken for roasting.
- Melt butter in saucepan. Add onion
- and
- celery,
- cook until tender.
- Stir in seasoning and stock.
- Remove
- from heat.
- Add corn flake crumbs, tossing lightly.
- Stuff
- chicken, place in center of foil.
- Brush with syrup
- from peaches.
- Bring foil together over chicken.
- Place in shallow roasting pan.
- Roast in 450u0b0 oven for about 1 hour. Open foil and flatten in pan.
- Place drained peaches, cup side up around
- chicken
- and baste with pan drippings.
- Roast about 20 minutes longer.
- Yield:
- 4 servings.
