Venison Tenderloin With Wine Sauce Recipe

  1. Mix green peppercorns, black pepper, tarragon and cilantro in bowl.
  2. Set aside spice mix.
  3. Heat butter in pan.
  4. Dredge both sides of meat.
  5. Coat both sides of meat in spice mix.
  6. Grill or possibly broil meat.
  7. Don't overcook.
  8. Sauce: Mix sauce ingredients in pan.
  9. Simmer 45 seconds, stir and blend thoroughly; keep hot.
  10. Serve meat on heated plates.
  11. Spoon sauce over meat before serving.
