Layered Tortilla Pie(Mexican Casserole)
- 1 lb. ground beef
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 Tbsp. butter or margarine
- 1 (8 oz.) can tomato sauce
- 1 (2 1/4 oz.) can sliced black olives
- 1 Tbsp. chili powder
- 1 tsp. salt
- 1/4 tsp. pepper
- 6 corn tortillas, buttered
- 2 c. shredded Cheddar
- 1/2 c. water
- Brown beef, onion and garlic in 1 tablespoon butter or margarine.
- Drain.
- Add tomato sauce, olives, chili powder, salt and pepper.
- In a round 2-quart casserole dish, alternate layers of tortillas, meat sauce and 1 1/2 cups cheese.
- Sprinkle remaining 1/2 cup cheese over top.
- Pour water at edge of casserole into bottom.
- Cover and bake at 400u0b0 for 25 minutes. Uncover; let stand for 5 minutes before cutting into wedges. Serves 4.
