Blackberry Relish
- 1- 1/2 cup Blackberries, Chopped
- 1 cup Onion, Finely Diced
- 1/2 cups Jalapeno Or Red Serrano Hot Peppers, Finely Diced
- 1/2 cups Sweet Pepper, Red, Orange, Or Yellow, Finely Diced
- 1 stick Butter (NOT Margarine)
- 1- 1/2 Tablespoon Garlic, Minced
- 1/4 cups Strawberries, Not Too Ripe, Finely Diced (optional)
- 1 whole Tomato, Small, Finely Diced (optional)
- 8 teaspoons Lemon Juice
- Salt
- Playing around with sweet fruit and hot peppers yesterday resulted in this amazing relish to eat over our broiled tilapia!
- I used a food processor and pulsed the blackberries 3 times, carefully (dont liquify).
- Chop onions, hot and sweet peppers (and the tomato and strawberries, if using).
- In a large skillet, melt butter, then saute onions, garlic, hot peppers, and sweet peppers.
- Add in blackberries and heat until simmering.
- If using, add in the strawberries and tomato.
- Simmer on medium for a few minutes.
- Stir in the lemon juice and salt liberally.
- I had about half a cup of my spicy sweet pico de gallo left over (with tomatoes in it), so I tossed it in.
- That is why I said it is optional to add them in.
- Its fine without them!
