Pacific Saury Roasted with Sesame Seeds

  1. Fillet the fish in 3 layers and then cut in half.
  2. Pre-season with the sake, soy sauce and juice from grated ginger, and let sit for 20 minutes.
  3. Coat the fish in sesame seeds, then cook both sides in a frying pan.
  4. Transfer to serving plates, sprinkle on some chopped chives, and serve with drained grated daikon radish.
