Tarte Vaudoise

  1. Preheat the oven to 450F.
  2. After refrigerating the dough, prick it all over with a fork.
  3. Combine the sugar and cream and spread the mixture over the bottom of the dough.
  4. Sprinkle with cinnamon.
  5. Bake until the crust is golden brown, 10 to 15 minutes; cool completely before serving.
  6. Use 1/2 cup brown sugar creamed with 1 egg and 2 tablespoons butter.
  7. Omit the cream and cinnamon and proceed as directed.
