Chicken With Peanut Sauce
- 1 cup ground peanuts (or 250 g)
- 1 chicken, cut into serving pieces
- 23 cup oil (peanut oil is usually used, or 150 cc)
- 20 ounces ripe tomatoes, peeled, seeded and finely chopped (or 500 g)
- 2 ounces onions, finely sliced (or 50 g)
- hot black pepper
- salt and pepper
- Brown chicken in half the oil.
- Heat the rest of oil in a large pot, and add tomatoes, mashing them.
- Add onions, hot pepper powder, salt, and black pepper.
- Cook 15 minutes, then add chicken.
- Thin peanut paste slightly with about 1 cup/250 cc of water, and add to chicken, mixing well.
- Add more hot pepper to taste.
- Cook, covered, over medium heat for 20 minutes or until chicken is done.
- Sauce should be thick.
- Served with steamed rice.
