Buffalo Chicken Bites

  1. Preheat the oven to 400 degrees F. In a large bowl, combine the chicken, cream cheese, ranch seasoning, buffalo sauce, and blue cheese crumbles.
  2. Mix until well combined.
  3. Season with pepper, to taste.
  4. Spread out the pizza crust and stretch it out to its full size.
  5. Cut the dough into 4 even strips.
  6. Place one strip in front of you and spread 1/4 of the chicken mixture onto one half of the dough, leaving the edge of the dough clear.
  7. Fold the other half of the dough over and pinch the edges closed.
  8. Repeat with the remaining dough and chicken mixture.
  9. Place on a greased cookie sheet.
  10. Lightly whisk the egg white and brush on the top of the dough.
  11. Bake for 10-15 minutes, or until the top is golden brown and the filling is hot.
  12. Allow to cool slightly and slice into bit-sized pieces.
  13. Serve with additional buffalo sauce.
