Fast Chocolate-Pecan Fudge
- 1/2 c butter or margarine
- 3/4 c Hershey's cocoa
- 4 c confectioners sugar
- 1 tsp Vanilla (pure vanilla extract is best)
- 1/2 c evaporated mile
- 1 c pecan pieces
- Pecan halves for top decorations-optional
- Microwave butter in 2 qt Micro-proof bowl at high (100%) for 1-1 1/2 minutes or until melted.
- Add cocoa, stir until smooth. Stir in confectioners sugar and vanilla, blend well.
- (Mixture may be dry and crumbly.)
- Stir in evaporated milk, microwave at high for one minute; stir.
- Microwave an additional 1 minute or until mixture is hot.
- Stir until smooth; add pecans.
- Pour into foil lined 8 or 9 inch square pan.
- Garnish with pecan halves, if desired.
- Cover; chill until firm, about 1-2 hours.
- Cut into 1 inch squares.
- Store, covered in refrigerator.
