Cheese Mantou Buns

  1. Let the unsalted butter come to room temperature, or microwave for 30 seconds at 500 W to soften.
  2. Add sugar and egg (setting aside 1 tablespoon to brush on the buns) and mix well with a whisk.
  3. Sift the ingredients into the butter, egg and sugar, and use a rubber or wooden spatula to mix in.
  4. (Mix it well, it's OK to knead.)
  5. Divide both the dough and the cheese into 16 portions.
  6. Preheat the oven to 390F/200C.
  7. Wrap the cheese with the dough to form buns.
  8. Line a baking sheet with kitchen parchment paper, brush with the reserved egg, and sprinkle on sesame seeds if you have them.
  9. Set the temperature on the preheated oven to 375F/190C, and bake the buns for 15 minutes.
  10. If the dough is still soft at the end of 15 minutes, leave in the oven with the heat switched off to bake in residual heat.
  11. I used this soft processed cheese, which contains cream cheese.
  12. The buns are delicious made with regular cream cheese too.
