Cooked Light Strawberry Jelly - CERTO Light Crystals

  1. Crush strawberries, one layer at a time.
  2. Place prepared strawberries in jelly bag; hang and let drip into bowl until dripping stops.
  3. Press bag gently to remove any remaining juices.
  4. Measure exactly 4-1/4 cups prepared juice into large saucepan.
  5. Combine 1/4 cup sugar and pectin crystals.
  6. Add to prepared juice; mix well.
  7. Bring to full rolling boil on high heat, stirring constantly.
  8. Add remaining sugar; stir.
  9. Return to full rolling boil; cook 1 min., stirring constantly.
  10. Remove from heat.
  11. Stir and skim foam for 5 min.
  12. Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims.
  13. Cover with lids.
  14. Let stand at room temperature 24 hours or until set.
