Cooked Light Strawberry Jelly - CERTO Light Crystals
- 4-1/4 cups prepared juice (buy about 12 cups strawberries)
- 3-1/4 cups sugar, divided
- 1 box Certo Light Pectin Crystals
- Crush strawberries, one layer at a time.
- Place prepared strawberries in jelly bag; hang and let drip into bowl until dripping stops.
- Press bag gently to remove any remaining juices.
- Measure exactly 4-1/4 cups prepared juice into large saucepan.
- Combine 1/4 cup sugar and pectin crystals.
- Add to prepared juice; mix well.
- Bring to full rolling boil on high heat, stirring constantly.
- Add remaining sugar; stir.
- Return to full rolling boil; cook 1 min., stirring constantly.
- Remove from heat.
- Stir and skim foam for 5 min.
- Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims.
- Cover with lids.
- Let stand at room temperature 24 hours or until set.
