Braised Fish
- 1/4 c. oil
- 1 1/2 lb. pan-dressed fish or 1 lb. fish fillet, such as haddock
- flour
- 1/2 tsp. sugar
- 1/2 tsp. ginger
- 1/4 tsp. garlic powder or 1 clove garlic, minced
- 1 Tbsp. soy sauce
- 1 Tbsp. sherry
- water
- 1/2 tsp. freshly ground black pepper
- chives
- 2 medium ripe tomatoes, chopped
- 1 Tbsp. chopped parsley
- 1 tsp. cornstarch
- 1/2 c. water
- salt to taste
- Dust fillets lightly with flour.
- In a heavy skillet, heat oil and brown fish on both sides.
- Combine sugar, garlic, and ginger with soy sauce, sherry and enough water to make 1 cup.
- Pour over fish, cover and braise 10 minutes.
- Uncover, add black pepper, chives, parsley and chopped tomatoes.
- Cook, uncovered, another 5 minutes.
- Mix together cornstarch, salt and water, blend well. Simmer 5 minutes more.
