Summer Squash Saute
- 2 bell peppers
- 2 medium sweet onion
- 2 large yellow summer squash
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1 tsp dried sage
- 1 cup day old cornbread crumbs
- Dice onion, pepper and slice squash.
- Heat olive oil in a large skillet.
- Add onion, pepper and squash and saute until onions turn clear.
- Add sage and salt.
- Continue saute until first sign of browning.
- Add cornbread crumbs to the saute.
- Blend in with vegetables and continue cooking until the vegetables reach a desired level of browning.
- Serves 4.
- This is a quick side dish.
- I made this on a whim because I got a great price on squash this week and happened to have some cornbread that was ok, but no longer fresh from the oven.
- It tastes breaded without the labor of preparing a breaded vegetable.
