Tofu Purses
- 1 package deep fried tofu purses, aka abura-age-dofu (available in Asian supermakets)
- 3 cups sushi rice, recipe follows
- 3 cups enoki mushrooms
- 3 cups scallions, sliced on the bias
- 3 cups carrots, julienne
- 3 cups sesame seeds, toasted
- Follow the instructions on the package for the tofu purses and boil the individual packets for 5 minutes.
- Remove the packets from the boiling water and allow the packages to cool.
- Open the packages and remove the fried tofu pockets.
- Fold the mouths of the packages inward to about 1/4 depth of the pouch to make purses.
- Fill the purses with sushi rice and a variety of other vegetables and garnishes to suit your taste.
