Butterscotch Meringue Pie
- 3 eggs, separated
- 1 12 cups brown sugar
- 5 tablespoons flour
- salt
- 2 cups milk
- vanilla extract
- 2 tablespoons butter
- 1 baked pie shell
- 18 teaspoon cream of tartar
- 6 tablespoons sugar
- Beat egg yolks, brown sugar, flour, 1/2 teaspoon salt and milk together until smooth.
- Pour in saucepan; cook until thick, stirring constantly.
- Add 2 teaspoons vanilla extract and butter; mix well.
- Pour in pie shell.
- Beat egg whites until stiff; beat in cream of tartar, sugar, 1/2 teaspoon vanilla and several grains of salt.
- Spread over pie filling.
- Bake in preheated 400-degree oven until browned.
