Scandinavian Fried Fish
- 1 1/2 to 2 lb. fish (cod or haddock)
- cooking oil
- 2 eggs
- 1 1/2 c. flour
- 2 Tbsp. onion flakes
- 1 1/2 tsp. salt
- pepper
- 2 onions, sliced
- 2 bouillon cubes, boiled in 1 1/2 c. water
- Preheat oven to 300u0b0.
- Set oil to heat in a large skillet until a few drops of water will spatter.
- Beat the eggs in a pie plate.
- In another pie plate, mix the flour, onion flakes, salt and pepper.
- Dip fish sections into egg wash, then roll in seasoned flour until completely coated.
- Gently dip fish into skillet.
- Fry until fish is lightly browned on both sides and flakes easily.
- Remove to a baking dish in the oven.
- Saute onions in remaining fat.
- Remove and spread over fish.
- Pour bouillon over fish and bake for 5 to 10 minutes.
- Serves 5 to 6 happy people.
