Chicken Bog

  1. Cook hen in a large pot with water and the salt.
  2. The hen will take several hours to become tender.
  3. Once chicken is cooked, cool and de-bone the hen.
  4. Shred the chicken and set aside.
  5. In a large pot (cast iron works really well), saute onion in 1/2 stick of butter/margarine.
  6. Add the chicken broth (you can use the water the hen cooked in or use store-bought), sausage and chicken.
  7. Add pepper.
  8. Bring to a good boil.
  9. Add rice and bring back to a good boil.
  10. Stir and cover and turn to simmer.
  11. Cook for 30 minutes with a lid on.
  12. Do not stir or peek during the 30 minutes.
  13. Once 30 minutes is up lift lid and place the remaining one stick of butter/margarine on top and replace the lid.
  14. Once butter/margarine is melted, it is ready to eat.
