Shrimp St. Remy
- 3 c. shelled shrimp
- 1/2 stick butter
- 2 tsp. finely chopped green onions
- 1 Tbsp. finely chopped parsley
- 1/4 c. whole-wheat flour
- 2 c. milk
- salt and pepper to taste
- 1 tsp. prepared mustard
- 1 Tbsp. Worcestershire sauce
- 3/4 c. grated Parmesan cheese
- In a skillet, melt the butter and saute the green onion and parsley just until they wilt. Blend in the flour. Add the milk slowly, stirring constantly, and cook until thick. Stir in the salt, pepper and mustard. Add the shrimp and cook gently just until the shrimp turn pink and are done. Remove the skillet from the heat and stir in the Worcestershire sauce and 1/2 cup of the Parmesan cheese. Spoon this into individual ramekins or a shallow baking dish. Sprinkle with remaining 1/4 cup of Parmesan cheese and broil close to the heating element until the cheese browns. Serves 6.
