Oven-Baked Polenta

  1. Butter a shallow 2 1/2- to 3-quart baking dish, and set aside.
  2. Place stock or water and salt into a large saucepan, and bring to simmer.
  3. Remove pan from heat.
  4. Heat oven to 350 degrees.
  5. Slowly pour polenta into stock, stirring rapidly with a wooden spoon.
  6. Place pan on medium heat.
  7. Slowly bring to a boil, stirring constantly in same direction.
  8. Boil 5 minutes, continuing to stir.
  9. Pour polenta into buttered dish, and cover with buttered foil.
  10. Bake for 1 hour.
  11. Remove foil and serve.
