Amber's Banana Muffins
- 5 medium eggs
- 2 tablespoons flax seeds
- 5 tablespoons skim milk
- 2 teaspoons vanilla extract
- 4 tablespoons Agave
- 5 really ripe bananas
- 12 cup butter, softened
- 12 cup raisins
- 14 teaspoon sea salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup almond meal
- 34 cup oat flour
- 2 cups all-purpose flour
- soak raisins over night, drain excess water & puree.
- preheat oven to 350.
- add bananas and flax to the raisins and puree.
- transfer banana mixture to a mixing bowl and add milk, vanilla, agave, butter, & eggs - using a mixer on med/low speed for 1 minute (until combined).
- in a separate bowl mix salt, baking soda, baking powder, almond meal, oat flour, & all purpose flour.
- slowly mix the dry ingrediants inches mix until wet on low then med for 1 minute.
- portion out into 36 greased or lined muffin cups.
- bake for 20-30 min or until toothpick inserted comes out clean.
