The Perfect Chili

  1. Heat oil in a dutch oven or heavy-bottomed pot over medium heat.
  2. Add pepper and onion and saute until they soften, about 8 minutes.
  3. Add ground beef, and salt and pepper to taste.
  4. Once beef is browned, add the cumin, chili powder, garlic powder, cayenne pepper and parsley.
  5. Cook for about 3 minutes, stirring frequently.
  6. Add tomatoes, sugar, cocoa powder, vegetable broth, corn starch and chili sauce.
  7. Simmer for 1 hour.
  8. Drain and rinse kidney beans.
  9. Add to chili and cook for about 20 minutes more.
  10. Serve with sour cream and grated cheddar cheese.
