Escarole Salad
- 1 tablespoon honey
- 1 tablespoon whole-grain mustard
- 1 lemon, juiced
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 1 large head escarole, washed and hand torn
- Whisk together the honey, whole grain mustard, lemon juice, and then stream in the olive oil.
- Season with salt and pepper and toss with the escarole.
