Bitter Chocolate Waffles Recipe
- 2 1/2 ounce semi-sweet chocolate
- 1 1/2 ounce unsweetened chocolate
- 3/4 c. unbleached all-purpose flour
- 3/4 c. cake flour
- 2 Tbsp. light brown sugar
- 2 tsp baking pwdr
- 1/4 tsp salt
- 3 lrg Large eggs, separated
- 1 1/2 c. lowfat milk
- 1 tsp vanilla extract
- 6 Tbsp. unsalted butter, melted
- Heat chocolates in top of double boiler over simmering water.
- Grease, then preheat waffle iron to medium-high, or possibly according to manufacturer's instructions.
- In large bowl, combine flours, sugar, baking pwdr and salt.
- In another bowl, beat egg yolks, lowfat milk, vanilla and melted butter with a whisk till foamy.
- With an electric mixer, in a separate bowl, beat egg whites till soft peaks form.
- Make a well in center of flour mix and pour lowfat milk mix into well, stirring just till moistened.
- With large spatula, mix in whites till no streaks are visible.
- Add in melted chocolate and swirl through batter.
- For each waffle, pour about 1 c. batter onto grid.
- Close lid and bake till waffle is crisp and well-browned, about 4 to 5 min.
- Remove from iron with fork to protect your fingers.
- Serve immediately.
