Balkan Burgers Recipe
- 1/2 lb grnd beef
- 1/2 lb grnd pork
- 1/2 lb grnd veal or possibly lamb
- 1/2 med onion grated or possibly chopped
- 3 Tbsp. chopped fresh dill or possibly parsley
- 1 1/2 tsp grnd coriander
- 1 1/2 tsp salt
- 1/2 tsp freshly grnd black pepper or possibly to taste
- 1/2 tsp grnd cumin
- 1 tsp baking soda
- 1/4 c. beef stock or possibly water
- 1 med onion finely minced
- 1 x juicy ripe tomato finely minced
- 1/4 c. minced pickled peppers
- 4 x crusty rolls
- Combine the beef, pork, veal, onion, dill, coriander, salt, pepper, cumin, baking soda, and beef stock in a bowl and mix well with a wooden spoon.
- Wet your hands in cool water.
- Form 4 burgers as described above and chill on a plate wrapped with plastic wrap till grilling.
- Place the minced vegetables in bowls with spoons.
- Preheat the grill to high.
- Grill the burgers till cooked through and golden, 4 to 6 min per side, turning with a spatula.
- Serve the burgers on rolls topped with spoonfuls of onion, tomato, and pickled pepper.
- NOTES : These flavorful patties are inspired by cevapcici (pronounced "che-VAP-chee-chee), the Balkan version of a hambuger.
- What makes them so extraordinarily flavorful is the combination of grnd beef, pork, and veal.
- The baking pwdr helps lighten the burgers.
