Chicken With Tomatillo Sauce Recipe

  1. Cook chicken for 45 min in boiling water to cover.
  2. Drain chicken, remove skin, and reserve broth.
  3. Keep chicken hot.
  4. Remove husks from tomatillos.
  5. Place half of tomatillos, cilantro, celery, green onions, lettuce, sunflower seeds, and chilies in blender container.
  6. Add in 3/4 c. chicken broth and blend well.
  7. Repeat with remaining half of same ingredients plus 3/4 c. broth.
  8. Combine sauce and add in cumin and garlic pwdr.
  9. Heat butter in large skillet.
  10. Add in tomatillo mix; simmer for 15 min, stirring till thickened.
  11. Add in more broth if sauce gets too thick.
  12. Season with salt and pepper to taste.
  13. Serve over warm, cooked chicken.
  14. Serves 6 to 8.
