Red Cabbage Sweet-Sour
- 1 medium head red cabbage, coarsely chopped
- 4 slices bacon, diced
- 1 onion, thinly sliced
- 2 apples, sliced
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 to 2 Tbsp. sugar
- 1/4 c. vinegar
- 1/4 c. water
- 2 Tbsp. cornstarch
- 1/4 c. water
- Chop cabbage.
- Brown bacon in skillet and pour off excess fat. Add to bacon bits the cabbage, onion and apples.
- Combine salt, pepper, sugar and 1/4 cup water and pour over cabbage.
- Mix well with fork.
- Cook over moderately high heat for 10 minutes or until cabbage and apples are tender.
- (Add more water if needed to keep from burning.)
- Add vinegar and mix well.
- If thickening is desired, mix cornstarch in 1/4 cup water.
- Cook an additional minute or 2 until mixture comes to boiling point.
- Makes 5 to 6 servings.
